Healthy and Delicious Oat Bran Muffins

Oat Bran Muffins:  (submitted by Expert Trainer Christy Gould)

2 cups Quaker Oat Bran Hot Cereal, uncooked
¼ cup firmly packed brown sugar
2 tsp. baking powder
½ tsp salt (optional)
1 cup skim milk or 2% low-fat milk
2 egg whites, slightly beaten
¼ cup honey or molasses
2 TBSP vegetable oil

Heat oven to 425 degrees F.  Line 12 medium muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray.  Combine dry ingredients; mix well.  Add combined milk, egg whites, honey, and oil; mix just until dry ingredients are moistened.  * Fill prepared muffin cups ¾ full.  Bake 15 to 17 minutes or until golden brown.
*VARIATIONS:  Stir into batter ½ cup fresh or frozen blueberries or ½ cup (1 medium) mashed, ripe banana.

Member Sarah Scneider's Training Testimonial about Expert Trainer Grant Gregory

Working out with Grant… What’s it like?

In order for me to meet my health goals, I needed a trainer who would partner with me to reach that goal and was as invested in the results as I was (i.e. someone who cared).   I needed someone who wouldn’t let me negotiate (or whine) my way out of the work and who would hold me accountable.  I needed someone who would push me to continuously higher levels of performance and expect more while understanding when to balance that with my limitations.   I needed variety in the workouts to keep myself engaged in the process and focused on the goal.

Grant Gregory has done this and more.  Not only has Grant met and exceeded my expectations above, he’s also very professional, dedicated, friendly, knowledgeable, focused and fun.   He doesn’t let me off the hook when I’m feeling less than focused and he ensures I’m constantly doing more and doing it correctly.  He brings a lot of variety to the workouts – some of which I’m sure are designed specifically to torture me – he’s very creative!   As I’ve told Grant, I don’t necessarily like some of the activities, but I definitely appreciate the variety and results.  He has also been flexible with my workout schedule since my work travel can be rather inconsistent.  He’s a great communicator also - he even has well-timed “friendly reminders” for me outside of my workouts.

At the end of the day, the proof is in the results; I have dropped two pant and two shirt sizes since working out with Grant plus I just feel stronger and healthier.  Even more amazing to me is that I’m still at it after three months – remarkably, I’m having fun!  My success is directly related to Grant’s coaching and encouragement throughout the journey.
